Preheat oven to 180°C.
Cut off the tops of the tomatoes and carefully scoop out the flesh with a spoon. Reserve the removed flesh.
Heat the olive oil in a frying pan over medium heat. Add the chopped onion and garlic, and sauté until golden.
Add the minced meat and cook until golden brown. Then add the chopped tomato flesh and raw rice. Mix well.
Stir in fresh parsley, paprika, oregano, salt and pepper. Leave to cook for a few minutes until the flavours blend.
Fill each hollowed-out tomato with the meat and rice mixture. Place in an ovenproof baking dish.
If using feta cheese, sprinkle a little over the top of each stuffed tomato.
Sprinkle grated cheese over the top of each tomato.
Cover the baking dish with aluminum foil and bake for about 30 minutes.
Remove the foil and cook for a further 5 minutes, or until the cheese is melted and lightly browned.
Remove from oven and let stand a few minutes before serving.
Tip
🌿 For a vegetarian version, replace ground meat with plant-based proteins like crumbled tofu or cooked lentils, and add extra vegetables like zucchini or mushrooms for added texture and flavor.
