Preheat oven to 200°C.
Wash the sweet potatoes, cut into thick slices and place on the baking sheet. Season with a little olive oil, salt, pepper and spices if desired. Roast in the oven for about 30-35 minutes, until tender and lightly browned.
Meanwhile, prepare the guacamole. Mash the avocado in a bowl, add salt and pepper to taste, and mix well.
Brown the whole-grain breads in a skillet.
Prepare the vegetables in thin slices.
Once the sweet potatoes are cooked, assemble your burgers. Spread guacamole on the bun, add the roasted sweet potato slices, vegetables, and a dollop of vegan mayonnaise. Add more salt and pepper if necessary.
Serve your baked sweet potato burgers hot.
