Slice the onion and chop the meat.
Heat the olive oil in the couscoussier and sauté the onion.
Add the meat and brown.
Add the diced tomatoes, tomato paste, spices and a little water. Simmer for 20 minutes.
Meanwhile, prepare the vegetables. Peel and slice the carrots, dice the zucchinis and chop the coriander.
Add the vegetables to the couscoussier and continue cooking for 30 minutes.
Place the couscous in a large bowl and sprinkle with boiling water. Leave to stand for 10 minutes, then flake with a fork.
Pour the couscous into the couscoussier basket and steam for 10 minutes.
Transfer the couscous to a large dish, arrange the meat and vegetables on top, and drizzle with the sauce.
Serve hot, garnished with chopped fresh coriander.
