Preheat oven to 180°C (gas mark 6).
In a large bowl, combine the flour and yeast.
Add eggs, milk and olive oil. Mix well until smooth.
Stir in the mushrooms, peas, carrots and grated cheese. Season with salt and pepper, and add parsley and dill if desired.
Place paper liners in the muffin tins, then fill them two-thirds full with the mixture.
Bake for 20 minutes. The muffins should be lightly browned on top.
Let cool before serving!
